Easy Pumpkin Dessert

1 box yellow cake mix (reserve 1 cup for topping)
1/2 cup soft butter
1 egg
1 29oz can pumpkin
2 eggs
2/3 cup evaporated milk
1/2 cup brown sugar
3 tsp pumpkin pie spice
1 cup cake mix
1 tsp cinnamon
1/4 cup sugar
1/4 cup butter
Mix together crust ingredients and press in the bottom of a greased 9×13″ pan. Blend filling ingredients together and pour over crust. Mix topping ingredients till crumbly. Sprinkle over filling. Bake at 350° for about 50-60 minutes. Serve with fresh whipped cream or vanilla ice cream. We like it warm.

-If you don’t have pumpkin pie spice, you can substitute 2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, and 1/4 tsp cloves.

Easy Cheesy Mexican Casserole

Mustard & Maple Syrup Glazed Chicken

6 boneless, skinless chicken thighs (you can use bone-in too)
one large shallot, minced
3 tablespoon of real maple syrup
1 1/2 tablespoons dijon mustard with seeds

Ingredients:

Brain Power Salad-Spinach Salad with Salmon, Avocado and Blueberries


8 oz Smoked salmon


1 Avocado, pitted and diced
4 cups Baby spinach
1/2 cup Blueberries, fresh
1/2 Red onion


1 tbsp Honey
1 Honey chia seed vinaigrette

Baking & Spices

1/4 tsp Salt

Oils & Vinegars

2 tbsp Apple cider vinegar
1/3 cup Olive oil

Nuts & Seeds

1 tbsp Chia seeds
1/4 cup Walnuts


1/4 cup Feta or blue cheese crumbles, light

Cheesy Bacon Bombs

Bacon Bombs:
1 can (8ct.) Pillsbury Grands Flaky
Layers Biscuits
Cubed Mozzarella Cheese (1-1″ cube
per Bomb)
2 lbs. of Bacon (1 slice per Bomb)
Oil for frying (I used Canola)
Cube up the Cheese, and cut each
Biscuit into fourths. Place one piece of
Cheese inside a Biscuit quarter, and
roll it up in there, nice and tight…
Wrap each rolled Bomb in a slice of
Bacon, and secure it with a skewer or
In a med/large pot, heat up approx.
2″ of Oil (to 350 degrees) and fry them
up in small batches. Maybe one or
two at a time, the oil will expand so
stay close…
Drain them on some Paper Towel, but
serve them up good and warm.

Spicy Chicken With Broccoli Over Rice

Super easy healthy meal idea: 1/2 cup microwave brown rice (7 mins in microwave). 1 head of cooked broccoli. Chicken breast with hot sauce on top. Yum and you can make the day before to bring to work for lunch.


Easy Hot Grilled Pizza

This is so easy Teri, Take flour tortillas and slgihtly toast them on the grill both sides. Them add warm pizza sauce and any toppings you like. Pepperoni, sausage, onion, mushrooms, green peppers, canadian bacon, ect. Add shredded cheese and pulled lid of grill down. Just need to watch the cheese so it doesn't burn. About 2-4 minutes and hot grilled pizza is done. We camp alot and this is so easy.            Read more...
